||Clay-limestone soil formed in the tertiary period (Cretace) mottled with belemnite rostra. These fossils widely spread in the chalk of Le Mesnil are named BELEMNITA QUADRATA in Latin.
||Pressed with antique vertical wooden DOLLAT press.
||Traditional: 6 months in thermo-regulated stainless steel or resin epoxy tanks then aged in special bottles for at least 5 years in our cellars in Le Mesnil-sur-Oger.
||Pair with Iceland sea urchins.
