||90% Chardonnay, 10% Pinot Nero

||When they become fully ripe, the grapes are picked extremely quickly, pressed gently and fermented in steel tanks at a controlled temperature of roughly 18 °C. After pressing , some of the Chardonnay is fermented and refined in small wooden barrels. The cuvee is produced in Spring and the blended wine is put in bottles together with yeasts.
||The wine is aged on the yeasts in the bottle for at least 24 months.
||Fish, seafood, and delicate first courses. It can also be drunk as an excellent aperitif.
