DOC Collio Goriziano o Collio Bianco
||Braide Alte vineyards situated in the hamlet in the Municipality of Dolegna Ruttars Collio.
||Harvest made entirely by hand in boxes, with cold maceration in a horizontal press for a period of eight hours and subsequent cleanup of must by decantation.
||The fermentation takes place in barriques of Allier at a controlled temperature of 14-16 degrees.
||After fermentation, the product thus obtained is not transferred and remains so to mature in the same containers for about eight months mantenenmantenendolo.Concluso this period, the final assembly takes place which is followed by bottling and further long period of bottle aging before release that the wine starts to be distributed.
||Pasta with seafood. Main dishes: fish with a good structure (grouper, swordfish, cod with tomato-based sauces or other flavorings), white meats, soft cheeses do not mature. Served at a higher temperature (16-17 degrees) and also excellent with lamb, roast kid, and grilled meats.
