Vintage in the Salento has been characterized from a mild summer, without torrid temperatures, with little precipitations; also september has been enough warm and dry. This passed climatic has favorite the attainment of a good concentration of the grapes and of an optimal maturation of the peels.

Harvest Selections comes from old vineyards of Primitivo, growing at saplings. The grapes are harvested when ripening begins.
Temperature fermentation After the pressing, fermentation and the following maceration last 20 days in stainless steel tanks. During this phase the must completes its alcoholic fermentation at a temperature between 28° and 32° C.

Production technique Malolactic fermentation in oak barriques.
Aging After the pressing and the maceration the wine will have completed the malolactic fermentation in barriques, made of French and Hungarian oak, where it is aged for 12 months, and afterwards it is aged in bottle for 10 months before being released.
