||After a winter climate characterized by average temperatures, spring arrived with widely varying meteorological conditions, characterized by low temperatures and frequent rains, which lasted until the end of June. This weather pattern, especially the lowering of temperatures, has caused a delay in the processes of flowering and fruit set. The harvest for grapes for Vin Santo began in mid-September.
||The grapes come from vineyards adjacent to The Estate Braccesca, mainly Malvasia and Trebbiano, were carefully monitored and collected serially according to the different degrees of maturation of the plots. In the second week of September and then we started the collection, which was completed towards the end of the month. The collection that took place directly in the plateau of drying has allowed us to maintain the integrity of the cluster by avoiding the transfer from tape to lattice once used. After the drying process, which lasted five months with a high sugar grapes were gently pressed, the wine flower thus obtained was put directly into oak barrels where the fermentation took place which of course is blocked when the wine has reached 17 ° alcohol, leaving a residual natural sugar. The fermentation takes place partly in old mothers of the Valdichiana and some with specially selected yeasts. After an aging period of more than two years, the wine was bottled in October.
