||End of September — beginning of October. Grapes are hand-picked. Only the best part of the bunch is kept for raisining on screens under condition of temperature and humidity control.
||Beginning of February. Fermentation under controlled temperature with selected yeast strains that extract and highlight the wide range of aromas from this jewel of nature.
||After some time in barrel to harmonise structure and aromas, the wine is transferred into large oak vats to complete the maturation process. It is then aged in the bottle until selected for release.
